Description

Avocado chicken salad is diced cooked chicken folded into mashed avocado with lime, tomato, red onion, celery, and bell pepper, with no mayo. It takes about 45 minutes from raw chicken (15 with cooked chicken), makes about 5 cups, and…

Ingredients
Scale:
  • 12 oz (340 g) raw boneless skinless chicken breast, or 2 cups cooked chicken breast, diced
  • 1 tablespoon neutral oil (only if cooking raw chicken)
  • 2 large ripe avocados, divided: 1 mashed, 1 cut into 1/2-inch cubes
  • 2 tablespoons lime juice (about 1 large lime)
  • 1 cup cherry or grape tomatoes, quartered
  • 1/4 cup red onion, finely diced
  • 1/4 cup celery, finely diced
  • 1/4 cup red bell pepper, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 1/4 teaspoon garlic powder
  • 1 teaspoon fine salt, divided
  • 1/2 teaspoon black pepper, divided
  • Optional: 1/4 cup plain Greek yogurt
Instructions
  1. Heat the oven to 425°F (220°C). Place the chicken between two sheets of parchment and pound the thick end until the breast is an even 1 inch. Uneven breasts dry out at the thin end before the thick end is done.
  2. Bake the chicken. Rub it with the oil, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper. Bake on a sheet pan for 18 to 22 minutes, until the thickest part reads 165°F (74°C). This step is also where the batch is worth doubling: extra cooked chicken makes an easy base for these Mediterranean lemon dill chicken bowls.
  3. Chop the vegetables while it bakes. Dice the onion, celery, and bell pepper small, quarter the tomatoes, and chop the cilantro. Flick out the watery seeds from the tomatoes if they are large, because wet tomatoes thin the salad by day two.
  4. Rest, dice, and chill the chicken. Let it rest 5 minutes, cut it into 1/2-inch cubes, spread it on a plate, and refrigerate 10 minutes. Skip this and the avocado softens on contact.
  5. Mash the first avocado. In a large bowl, mash one avocado with the lime juice, garlic powder, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper until mostly smooth.
  6. Fold everything in. Add the cubed avocado, chilled chicken, vegetables, cilantro, and yogurt if using. Fold with a spatula about 8 to 10 turns and stop when everything is coated. Stirring harder turns the cubed avocado to paste.
  7. Taste and adjust. Avocado needs more salt than you expect. Add a pinch of salt or a teaspoon of lime juice if it tastes flat.
