Description

These are breakfast tacos with a crispy shell baked from cottage cheese and egg white instead of a flour tortilla, topped with pesto, fried eggs, and avocado. Total time is about 35 minutes, and the part that decides whether the…

Ingredients
Scale:
  • 3 tbsp low-fat cottage cheese (200g)
  • 1 egg white
  • Pepper, oregano, and chilli flakes, to taste
  • 2 fried eggs
  • 2 tbsp pesto
  • A handful of rocket (arugula)
  • Chopped chives
  • 2 tsp sriracha
  • 1 avocado
  • Rocket: swap for baby spinach for a milder flavor.
  • Cottage cheese: full-fat works too, it just adds extra calories and a richer taste.
  • Extra tang: a sprinkle of feta or goat cheese on top works well.
  • Sriracha: swap for a milder hot sauce if you're sensitive to spice.
  • Whole eggs instead of egg white only: possible, but expect a softer, less crisp shell.
Instructions
  1. Preheat. Set your oven or air fryer to 400°F (200°C). The shells need high heat from the start to crisp properly.
  2. Mix the shell base. Whisk the cottage cheese and egg white together in a bowl until smooth and fully combined — no lumps of cottage cheese left.
  3. Shape the shells. Line a baking sheet with parchment paper. Spoon the mixture into two circles, about 6 inches across and roughly ¼ inch thick. Season with salt, pepper, oregano, and chilli flakes.
  4. Bake. Bake 20–25 minutes, checking at the 20-minute mark. At the halfway point, dab the surface of each shell with a paper towel to remove excess moisture — this step is what makes the shell crisp instead of soft. The shells are done when the edges turn golden brown and firm to the touch.
  5. Cool before topping. Let the shells sit on the tray for 10 minutes. They firm up as they cool, and topping them too soon makes them soggy.
  6. Assemble. While the shells cool, fry the eggs to a soft-set yolk, chop the chives, and slice the avocado. Spread pesto on each shell, then layer with fried egg, avocado, rocket, chives, and a drizzle of sriracha.
  7. Serve right away. These don't hold well once assembled — build them just before eating.
