Description

This is roasted or microwaved sweet potatoes filled with a spiced ground turkey and vegetable mixture, topped with melted cheddar. The fast version, using the microwave for the potatoes, takes about 40 minutes total; the oven version takes closer to…

Ingredients
Scale:
  • 4 medium sweet potatoes, similar size so they cook evenly
  • 1 lb lean ground turkey
  • 1 tbsp olive oil, plus 1 tsp for the potato flesh
  • 2 garlic cloves, minced
  • 1 tsp ground cumin, plus ⅓ tsp for the potato flesh
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 1 cup canned diced tomatoes, with juices
  • 1 medium zucchini, grated
  • 1 large handful spinach, chopped
  • 1 cup black beans, rinsed and drained (optional)
  • 1 cup corn kernels (optional)
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Vegetarian: swap the turkey for an extra cup of black beans or plant-based crumbles.
  • Zucchini: finely diced bell pepper works if you don't have zucchini.
  • Cheese: sharp white cheddar or pepper jack add more bite.
  • Spinach: chopped kale or Swiss chard work as a heartier substitute.
  • Potatoes: Yukon gold or russet potatoes work with this same turkey filling if you'd rather not use sweet potato.
Instructions
  1. Cook the potatoes. Microwave method: pierce each potato with a fork and microwave 3 minutes per side (about 6 minutes total for 4 potatoes, more if your microwave is weaker). Oven method: preheat to 425°F and roast 45-60 minutes, until a fork slides in with no resistance. The oven method takes longer but gives a better texture on the skin.
  2. Cook the filling. While the potatoes cook, heat 1 tbsp olive oil in a large pan over medium-high heat. Sauté the garlic until fragrant, then add the turkey and cook until browned, breaking it up as it cooks. Drain any excess fat.
  3. Season and simmer. Stir the cumin, paprika, oregano, and chili powder into the turkey until coated. Add the tomatoes, zucchini, spinach, black beans, and corn, and simmer 5-7 minutes until the liquid reduces and everything is warmed through.
  4. Prep the potatoes. Once the potatoes are tender, slice them open lengthwise and fluff the flesh with a fork, keeping it in the skin. Mix in 1 tsp olive oil and ⅓ tsp cumin.
  5. Stuff and broil. Spoon the turkey filling generously over each potato and top with shredded cheddar. Broil until the cheese is melted and just starting to turn golden — usually 3-5 minutes, but watch it closely since broilers vary a lot in strength.

Notes
  • Roast the sweet potatoes ahead during meal prep to cut the active time on a busy night.
  • Grate the zucchini finely so it blends into the filling — useful if you're feeding picky eaters.
  • Use a broiler-safe pan so you're not transferring dishes mid-recipe.
