Description

Thai beef salad is seared steak sliced thin, tossed with crisp vegetables and fresh herbs in a fish sauce–lime dressing. It takes 30 minutes start to finish, and the part that actually makes or breaks it is slicing the beef…

Ingredients
Scale:
  • 16 oz beef steak (sirloin, ribeye, or flank)
  • 2 tbsp vegetable oil, divided
  • ½ tsp salt, ½ tsp black pepper
  • 5 cups mixed lettuce leaves
  • 20 cherry tomatoes, halved
  • 1 small red onion, very finely sliced
  • 1 long cucumber, thinly sliced
  • ½ cup fresh coriander leaves
  • ½ cup fresh mint leaves
  • ½ cup roasted unsalted peanuts or cashews, for garnish
  • Steak: sirloin, strip, or flank all work — pick whichever slices thin cleanly.
  • Heat: remove the chilli seeds for less spice, or leave the chilli out entirely; the dressing still works without it.
  • Nut allergy: swap peanuts or cashews for toasted sesame seeds or crispy fried shallots.
  • Sharp onion: soak sliced red onion in ice water for 5 minutes before adding it in.
  • Greens: baby spinach or arugula work in place of lettuce.
Instructions
  1. Mix the dressing. Whisk chilli, garlic, coriander, mint, sugar, fish sauce, lime juice, both oils, and salt in a small bowl until the sugar dissolves. Taste it now — it should hit sweet, salty, and sour at once. If it tastes flat, it usually needs more lime, not more sugar.
  2. Sear the steak. Heat a heavy skillet or cast iron pan (10–12 inch) over high heat until it just starts to smoke. Brush the steak with 1 tbsp oil, season both sides with salt and pepper, and sear 2 minutes per side for medium-rare. Press the center with a finger — it should feel like the base of your thumb when your hand is relaxed, that's the medium-rare give.
  3. Rest it. Move the steak to a cutting board and let it sit 5 minutes before touching it. Cutting early is the single biggest reason this salad turns out dry — the juice hasn't had time to redistribute.
  4. Slice thin, against the grain. Look for the direction of the muscle fibers and cut across them, not along them, at a slight angle. This is what keeps each bite tender instead of stringy.
  5. Toss and plate. Toss lettuce, tomatoes, onion, cucumber, and herbs with half the dressing. Plate the salad, layer the sliced steak on top, spoon over the remaining dressing, and scatter with crushed nuts.
